The article examines French publications from the «Zolotyi Buriak» (Golden Beet) collection held by the National Scientific Agricultural Library of the NAAS. These publications are treated as a cohesive scientific and technical documentary corpus formed within the context of the European sugar industry's development from the late 19th to the first third of the 20th century. The study aims to identify the content priorities of these publications and their role within the collection as a specialized information and source complex. The methodological framework is based on source studies, historical-typological, and structural-analytical approaches, which ensured the systematic processing of the French editions without excessive bibliographic detailing.

The study established a predominance of applied scientific and technical works that define sugar beet processing technologies, chemical production control methods, and quality standards for raw materials and finished products. A significant share of summarizing and historical-overview works reflecting the institutional formation of the French sugar industry was identified. The content structure of the publications is categorized into three functional areas: sugar production technology, laboratory and analytical support, and organizational and regulatory management of production processes. Collectively, they represent the development of applied chemistry as a tool for technological management.

It is concluded that the French publications of the «Zolotyi Buriak» collection constitute a compact yet content-rich scientific and technical complex. It enables the reconstruction of the technological evolution of the European sugar industry and serves as a foundation for comparative historical and technical research.
